Apples…..when I see them, there is so much that goes through my mind. Apple pie, stewed app les and apple sauce but never ever chop, peel and eat! Yes, it’s one of those fruits that inspires me to bake it, cook with it, stew it… And I can assure you that there are some amazing things one can do with it. So I start my first blog with the Humble Apple Crumble. Yeah, yeah I know…Apple crumble??..go ahead, turn up your nose and look down upon this humble dish, but by the time I am through with the recipe you will be eating humble pie
So here we go, the apples are cut into 1/8th inch thick slices. If the slices are thin like wafers then you may end up with a mush. Golden raisins will add natural sweetness, a scattering of cashews or walnuts, and a splash of lime juice will tart it up.
The crumble is what makes this different from the apple crumble served by the neighbourhood aunty. It’s made with oats, slivered almonds, honey and less than half the butter you would normally use in a Digestive biscuit crust or a flour and sugar crust. I prefer using almonds and not walnuts since I find that walnuts become dark and give out a burnt taste when baked.
This is a must try apple crumble. The trick is to go ahead and make it your own….add a dash of Cointreau or orange juice, add nutmeg or cinnamon, toss in a few strawberries( I must warn you that strawberries add extra tartness to the filling and lend a pinkish tinge to the apples), serve it cold with a glass of warm vanilla milk or serve it warm with vanilla ice cream sprinkled with cinnamon. The possibilities are endless and I hope you enjoy the healthy version and next time you see apples you don’t thing chop, peel, eat !
THE HUMBLE APPLE CRUMBLE
For the filling-
3 large firm apples (600 grams)
11/2 tbsp. raisins
1-2 tblsps cashew nuts, halved
1 tblsp sugar
a generous tblsp of butter
juice of one lemon
1/2 tsp cinnamon powder
For the Crumble-
3/4 cup oats
1/4 cup almonds, slivered
1 tblspn brown sugar / damerara sugar
2 tbspns honey
1 1/2 tblspn butter
1/2 tsp cinnamon powder
pinch of salt
Pre-heat oven to 190 C Keep a 4 cup oven proof dish ready. For the filling , melt the butter and add the apples and sauté on medium heat, stirring constantly taking care the apples don’t burn. Add the sugar and raisins and sauté for a minute more. The apples should be soft but not mushy and the slices must hold their shape. put off the heat and add the cinnamon and cashews. Mix and empty into your baking dish and spread out evenly.
For the topping, in the same pan melt the butter, add the honey and mix well on low heat. Put off the heat and add all the dry ingredient’s. Mix them well and spread it evenly over the filing. Bake for 17-20 mins. Keep an eye on the crumble as you don’t want it dark and giving out a bitter taste. Remove when the topping is golden and slightly brown around the edges.
