This is the desi version of the Greek Tzatziki. Its a go to dip, really easy, minimal chopping and only mixing. It goes well with crackers, chips, nachos and is a good alternative to a heavy cheese sauce during the warm summers. Make sure you make a huge bowl if you are serving it with crackers or crisps….and have some in reserve.
I have kept it simple and reduced the chopping to the minimal. Grating goes faster…..grate the cucumber, garlic and chop the mint, drizzle over oil and go chill!
Yogurt and Cucumber Garlic Dip
400 grms Yogurt (hung to drain the water)
2 medium sized Cucumbers
2 cloves garlic crushed
2 heaped tblspoons chopped mint
a drizzle of olive oil (optional)
1/4 tsp Salt
- Empty the yogurt into a muslin cloth and give it a light squeeze to remove excess liquid. Set it aside.
- Peel and grate the cucumber. Transfer it to a clean kitchen towel. Wrap the towel round the cucumber mush and give it a tight squeeze so as to drain out all the liquid. Add it to the yogurt with the salt, mint and crushed garlic. Mix..
